The aforementioned pizza from yesterday's post. Ate over the FT's Life & Arts section from last weekend, & china by Rob Ryan.
Recipe Card:
pizza base (ready-made is fine)
2 red-skinned potatoes
mozzarella
rosemary
seasoning
olive oil (optional)
This is actually a pretty healthy meal* - those ready-made pizza bases (mine was from Waitrose) - a large is only 450 cals & 4.5g fat, & I used lo-cal mozzarella too..
~Thinly slice the potatoes (about 3-5mm), & boil for 7-8 mins. You don't want them to be over-cooked so that they fall apart when you pick them up with a fork.
~Layer with strips of mozzarella onto your pizza base.
~Scatter liberally with rosemary, crushed black pepper, & sea salt.
~Drizzle with olive oil if desired.
~Cook as per the instructions on your pizza base packaging.

*particularly when compared with the ostrich burger & churros i had for lunch.
