Elegance & Grace: Simple Salmon



As the evening sky faded from a salmon colour to a sort of flint gray, I thought back to the salmon I caught that morning, & how gray he was, & how I named him Flint.
Random, huh? But sort of poetic too..

You can't really go wrong with this oily fish, particularly if you poach it. I usually prefer to lightly roast it instead, being careful not to let it cook too long so that it retains its succulence. Here, I seasoned it with sea salt & crushed black pepper, some chilli flakes, a few strips of Sage, a little Dijon mustard, & baked in the oven for about 17 mins on a medium heat.

I dished it up with some brown basmati, red carmague & wild rice (Waitrose sell these grains in one packet, they're delicious & each take the same amount of time to cook) - boiled in chicken bouillon, & then liberally dowsed with some balsamic vinegar, hot sauce, & a good squeeze of lemon. Walnut halves & Spanish olives also graced the plate.

I went for the slightly more expensive salmon at the fish counter, organic fillets from the Duchy of Cornwall (hey, the Prince may have some contentious views on architecture, but he sure can bake some good shortbread & catch some good fish!) - the colour when uncooked was a paler pink than usual, but the flavour, & perhaps more importantly the texture, was wonderful. Worth those extra pennies.

When The Moon Hits Your Eye Like A Big Pizza Pie, THAT'S Amore!


The aforementioned pizza from yesterday's post. Ate over the FT's Life & Arts section from last weekend, & china by Rob Ryan.

Recipe Card:
pizza base (ready-made is fine)
2 red-skinned potatoes
mozzarella
rosemary
seasoning
olive oil (optional)

This is actually a pretty healthy meal* - those ready-made pizza bases (mine was from Waitrose) - a large is only 450 cals & 4.5g fat, & I used lo-cal mozzarella too..

~Thinly slice the potatoes (about 3-5mm), & boil for 7-8 mins. You don't want them to be over-cooked so that they fall apart when you pick them up with a fork.
~Layer with strips of mozzarella onto your pizza base.
~Scatter liberally with rosemary, crushed black pepper, & sea salt.
~Drizzle with olive oil if desired.
~Cook as per the instructions on your pizza base packaging.

*particularly when compared with the ostrich burger & churros i had for lunch.

My Day in Pictures

Today I looked back through old photos & marvelled at these fantastic meringues from Whole Foods in Kensington...
...resolved to read more fiction, beginning with Faulkner...
...made olive, rosemary & potato pizza for dinner (tip: parboil carefully sliced potato & layer with mozzarella, mmmm)....
&, shivering, pulled the blankets closer, and scrolled through some shots of East Coast America...
