With summer approaching, try this addition to a rather decadent picnic hamper. Melba toasts come wrapped in packs of 6, & the chicken mix can be stored in a tupperware tub. Sunshine, grass, serviettes? Let's go!
Recipe Card
cold roast chicken
lo-fat mayo
almond-stuffed olives
paprika
sea salt & black pepper
~ Mix all ingredients save for the melba toasts
~ Assemble
~ Enjoy!

thanks monica! roast chicken is one of those foods which taste just as good cold as hot - i think my other favourite is cold apple pie with a large serving of creme fraiche, mmm!
